I just finished my first trial of this vinaigrette. Close, but not quite. After a few tweaks, I think it will be spot on. Some may like it this way, though. Right now, it’s light on the vinegar and heavier on the orange flavor. I want it to have more bite. Hopefully tomorrow’s version will be spot on. :-p
Orange Olive Oil Vinaigrette (Round 1)
Serves Me
1T Olive Oil
1T Balsamic Vinegar
1T Apple Cider Vinegar (tomorrow I’ll double this)
3-4T Water
1/4t Orange Extract (tomorrow I’ll use 1/2 t this)
1/2T Dried Basil (~1g)
3g Chia Seeds
2g Psyllium Husk
Pinch Stevia
Simple Salad
(Serves Me)
50g Spinach, Lightly Chopped
100g Butter Lettuce, Lightly Chopped
120g Carrot, Finely Shredded
Besides those slight mods, I think I need a pinch of sea salt, garlic, and ginger too. There was just way too much orange and not enough of anything else. The chia and psyllium were great for thickeners, so play around with those amounts and the water to get your desired thickness. :-D Eat up!
