Easy Chipotle Tofu Stew

This is a very quick and easy recipe that makes 6-8 servings. The flavor combination, while a bit unique, is very satisfying. I think this recipe turned out great, and I am glad I made it in bulk. I plan on thoroughly enjoying this stew-ish meal for the next several days. I didn’t really know how to classify it. It is sort of like a chili, but not. It’s too thick to be a soup. So “stew” is the best I have. Vegan, but with the wonderful Diaya cheddar vegan “cheese” that adds a great creamy cheesy flavor.

Easy Chipotle Tofu Stew

(makes 6-8 servings)

1 15oz can Black Beans, drained well
2 10oz cans Lime & Cilantro ROTEL, add liquid
1 4ox can Green chilies
1 Block Firm Tofu, crumbled to look like cottage cheese
454g Roasted Chipotle Salsa (Wegmans brand..but I’m sure others exist)
500g Grape Tomatoes, cut in half longways
5g each Chili Powder, Cumin Powder, Nutritional Yeast
3g Turmeric powder
112g Diaya Cheddar Cheese

In a med-large pot, combine all ingredients except the “cheese”. Allow the stew to come to a low boil. Once the stew is up to temperature, add the “cheese” and stir in well. Done. Yes, it’s that simple.

I really really enjoyed this!

Chipotle Tofu Bowl

I’m totally in love with this dish right now. It’s simple, quick, and bursting with flavor. It would be easy to change up the recipe a bit to put your own twist on it too. Since it’s pretty high in protein, it’s very satisfying, and the different textures add to eating experience.

Chipotle Tofu Bowl (serves 1)

1 can Lime Cilantro Rotel
1/2 can Green Chilies (2oz)
60g Chiptole Salsa
1/2 Block Firm Tofu
100g Grape Tomatoes, sliced in half across the length
100g Beans (Black or Cannellini)
1.5g Nutritional Yeast
2g each Cumin Powder, Chili Powder

In a skillet over medium heat, add the rotel, chilies, and salsa then mix. Add the seasonings, mix well. Add the tofu and “scramble” it with the spatula, and mix well. Add the beans, mix. I allow it to simmer for a few minutes to allow some of the liquid to boil off.

This makes a pretty big serving, so it could be divided depending on how hungry you are or if you want to eat something else with it.

Rotel Tofu Scramble!

This recipe came as a spin off from my Boca Rotel recipe combined with my Seasoned Tofu Scramble. I may still make a few changes, but I’ve eaten this the past two days and enjoyed it. The lime cilantro rotel gives this a great flavor, and the grape tomatoes add a wonderful texture. The seasonings can be changed up depending on preference. This is very filling!

Rotel Tofu Scramble!

(1 serving)

1/2 Block Firm Tofu (Lite Firm if available), chopped-”scrambled” with spatula
~100g Grape Tomatoes, chopped in half longways
~70g Black Beans
1 can Lime & Cilantro Rotel
1g each: Cumin powder, Chili powder
1.5g Nutritional Yeast

optional: Diaya Vegan Cheese

Over medium-high heat, combine rotel and tofu in a pan, scramble tofu, and mix well. Add seasonings and nutritional yeast. Add beans and tomatoes. Simmer for ~5 min. Done. I haven’t tried this with the diaya cheese, but I’m sure it would make a nice addition – especially the cheddar version.
