Raw paleo bread? Impossible…….right? WRONG. ;-p
I tried a ‘bread’ recipe from one of my raw food books today. I was impressed, and surprisingly so was QB. What? QB likes really likes a recipe? Yes! He thought it tasted like like rye bread or maybe a dense whole wheat. He was shocked, and very happy to have a ‘real’ sandwich. Lol. Now, this is more of a flat bread, and it is calorie dense (~95 cals per slice if you cut 16 slices), so be careful. I made the recipe pretty much exactly from a book since I really don’t know what I am doing with these types of recipes. So, credit goes to Ani’s Raw Food Kitchen book.
Black Sesame Sunflower Bread (9-16 slices)
1C Ground Flax Seed (~106g)
1/3C Whole Flax Seeds ~(56g)
1/2 t salt
1 clove garlic
45g Onion
1 1/3C Water
2/3C Sunflower seeds (80g)
1/4C Black sesame seeds (35g)
Preparation is quick and simple, but it takes 4-5 hours in the dehydrator. Mix flax-es, water, and sesame seeds in a bowl. In my small food processor, I finely chopped the onion and garlic, then added about 1/4 of the sunflower seeds and pulsed a few times to break them up. I then added the contents of the processor and the rest of the sunflower seeds to the mix.
The mix spreads over one dehydrator tray. I dehydrated at ~110F for about 4 hours, flipped, then dehydrated for another hour. The original recipe said to cut the one big square into 9 little squares, but I cut it into 16 to make the servings a bit smaller since they are calorie dense. Cutting the ‘bread’ into 9 squared would result in ‘normal’ sized sandwich slices.
I’m very excited to have this recipe. I am now interested in changing it up some, though. I can’t help but experiment in the kitchen. At least I can usually eat my creations. Ha.
