One day a year I treat myself to sweet potato casserole and stuffing, and if I have room, maybe some pie. While planned deviations like this can be fun, I’m all to happy to get back to my usual routine.
Almost all my calories on T-day came from sweet potato casserole. Not that that was hard to do since the casserole I made was loaded with calories. I only ate ~1800 calories, so I didn’t have a crazy high calorie day, just more than usual. However, the nutrient profile was lacking….
The day after I had my sorbet, but then I had some left over mashed sweet potatoes and some of that pie I made since I didn’t have any room on T-day.
I hope everyone had a great holiday! Here’s my food for T-Day and the day after. Not oodles of variety, but I enjoyed my deviation. Until next year, sweet potatoes!
