Peach & Pumpkin Chia Pudding!

This is my oatmeal replacement recipe! This is eaten cold, but I was eating my autumn spiced oatmeal cold too because it brought out the spices more. If I want a hot oatmeal replacement, I don’t know what I will do, but this should last me for a while. The volume of this recipe is about the same as my oatmeal, so I don’t feel like I am missing out there. The flavor, and texture is similar. The calories are similar. BUT, the carbs are much lower and the fat is much higher which is what I am going for. I want to eat more fat and lower carbs than I have been, and having my oatmeal everyday isn’t helping me do that.

Peach & Pumpkin Chia Pudding

(1 serving)

100g Canned Pumpkin, no salt added
160g Frozen Peaches
21g Chia Seeds
2g Psyllium Husk
120g Almond Milk, Vanilla Unsweetened
120g Cold Water
1g Cinnamon
0.5g Nutmeg, Cloves
Stevia

If you want to cook more than one serving of peaches for later use, go ahead. Boil peaches in just enough water to cover, adding water when needed, until peaches are soft enough to break apart easily. Put peaches in seal-able container and place in refrigerator or freezer long enough to completely cool down.

Mix the cooled peaches with the pumpkin in a tupperware or similar container. In a small mixing bowl, weigh and mix together the chia, psyllium, spices, and stevia then stir into thick peach and pumpkin mixture. Add almond milk, mix well. Add water, stir well. Put lid on container, shake, and place in refrigerator for a least a few hours to allow the chia seeds to thicken.

Makes a nice big bowl!
