Tangy Avocado Olive Oil Dressing with Carrot Apple Pepper Salad

This is a modification of a dressing I really enjoyed back in the spring. I wanted to incorporate olive oil into the recipe so I could use my yummy healthy new olive oil, and I discovered that the flavor didn’t change much. :-p This was a tasty meal, but I want to explore with different salad bases. The dressing is perfect, and will not change.

Tangy Avocado Olive Oil Dressing

(4 servings)

180g Avocado, mashed (1 med-large)
0.5C Apple Cider Vinegar
0.5C Water
4T Olive Oil
12g Garlic, Pressed or Minced
~2g Freshly Ground Black Pepper
Stevia

Combine all ingredients in a jar and shake well. Because the avocado is mixed with the vinegar, this keeps well, but I would still eat it within a week.

Pre-shaking.

Post shake.

Dividing into servings. Yum. Look at that green yummy goodness.

Carrot Apple Pepper Salad

(1 serving)

190g Carrot, Shredded fine
130g Gala Apple, chopped
110g Red Bell Pepper, chopped
40g Spinach, chopped

Toss ingredients then add dressing. :-)

Pretty salad.
