Orange Olive Oil Vinaigrette (Done?!)

Ok! I think this is it! I am eating this right now, and I don’t want to change a thing! :-D Well, I might add some spicy heat, but that’s just me being weird. I am just eating it on a simple salad, but I’m sure that with considerate planning this dressing could really make the right ingredients into a bangin’ salad.

Orange Olive Oil Vinaigrette

Serves Me

1T Olive Oil
2T Balsamic Vinegar
2T Apple Cider Vinegar
2T Water
1/8t Orange Extract
1g Dried Basil
1g Garlic Powder
1g Ginger Powder
3g Psyllium Husk
Pinch Stevia

Simple Salad

(Serves Me)

60g Spinach, Lightly Chopped
100g Butter Lettuce, Lightly Chopped
120g Carrot, Finely Shredded

The vinaigrette is thick after it setups, which I like because it coats the salad well. If you want it thinner, add less psyllium.  The flavor was a nice mix of vinegar with the spices and hint of orange, and sweetness from stevia.  Here’s a pic of my salad, then the CRON-o-Meter data. :-)

My preferred method of eating salad is with chopsticks. :-D
