~Year’s Supply of Olive Oil

My ~years supply of olive oil came in the mail yesterday, so today begins my habit of regularly incorporating olive oil into my diet. I’m aiming for about 1T per day. I’ve realized a funny shift in my approach to salads. For once, I am trying to think of salad recipes as a way to incorporate oil into my diet, as opposed to incorporating more vegetables into my diet.  Since this is going to be an almost every day thing, I need to find several dressing recipes I would consider staples. Balsamic vinaigrette is the first thing that comes to mind, but after that I am drawing a blank.

Yesterday, the restaurant didn’t spice my meal as much as usual. They also didn’t give me as much sauce and piled the tofu really high. I think they were trying to be nice, but I ended up picking off at least half the tofu. So, I didn’t eat as much as I usually do when I go there. I’ll have to make sure to give them better instructions next time…..
