These are absolutely awesome. The wraps take a little work and require a dehydrator, but after that the rest of the recipe is a breeze. Despite the coconut milk and peanut butter, these are actually low calorie wraps. :-) I will be playing with the wrap recipe slightly, but nothing major. As long as the wraps aren’t dehydrated too much, they should come out fine.
Coconut Curry Wraps
(makes 2 14″x14″ dehydrator sheets, 2 large wraps or 4 half sized wrap)
1 Can Lite Coconut Milk (mine had 285cals/can)
20g Whole Psyllium Husk
26g Yellow Curry Paste – Mae Ploy
~1/2-3/4C Water
Combine all ingredients, and whisk well with a whisker. Spread the batter between two dehydrator sheet lined with non-stick paper. Dehydrate at 105F for about 4 hours. Check pliability around 3hrs. You want the wraps to be very soft and pliable while still holding together. You will probably need to flip the sheet over, and gently remove the liner to allow the back of the wrap to dry some. These wraps are the trickiest part, but if done correctly they turn out awesome.
Peanut Sauce
(makes 4 servings)
32g Natural Peanut Butter (2T)
30g Seasoned Rice Wine Vinegar (2T)
15g Low Sodium Soy Sauce or Tamari (1T)
Smidgen of Stevia
1-2g Cayenne Pepper (optional)
Put all ingredients in a small sealable jar and shake well. Done.
Spinach Filled Coconut Curry Wraps with Peanut Sauce
(makes 2 large, 4 small wraps)
2 Large Coconut Curry Wraps (entire recipe)
4 Servings Peanut Sauce (entire recipe)
140g Spinach, chopped
160g Red Bell Pepper, sliced long and thin
Divide pepper in half. On each wrap, place sliced pepper lengthwise down the center. In a large bowl, combine chopped spinach and dressing, mix well. Divide peanut sauce spinach in half and place on top of red pepper. Carefully but tightly wrap each wrap. Cut each wrap in half along the diagonal. Serve.
