Carrot-Bean Guacamole Salad

I needed to eat my guacamole without the wrap, so I created this as I was rushing around for work. It’s simple and tasty. It would be great inside a lettuce wrap or a homemade grain-free dehydrator wrap, but I haven’t had time to get/create those yet.

The beans go great in it, adding extra texture and flavor. Ditto with the carrots. Yum.

The salsa I use really adds to the flavor, but it’s a bit pricey. I blame my parents for introducing it to me; maybe I should guilt trip them into funding my new salsa love. Ha.

Carrot-Bean Guacamole Salad

(3 servings)

1 Med-Large Avocado (~180g)
1 can Lime Cilantro Rotel
1/2C Green Mountain Gringo Salsa (I like it HOT)
~300g Carrots, shredded fine
~300g Black Beans (I use drained canned)
~90g Spinach, chopped
3g Nutritional Yeast
6g Ground Cayenne Pepper (optional for extra heat)

Make the guacamole by mushing avocado with the mostly drained can of rotel. Add salsa, yeast, and cayenne then stir. Add beans and carrots, stir. Finally toss in the spinach. Divide 3 ways, then eat. Yum.
