Balsamic Italian Stir-Fry

I am loving my stir-fries, but I wanted to experiment with seasoning. This turned out great, and I am going to follow in this same style of experimentation in the future.

Balsamic Italian Stir-Fry

(4-5 servings)

295g Asparagus, chopped into ~1? segments
120g Broccoli, finely chopped
325g Snow Peas, cut in half
255g Vidalia Onion, diced
275g Sweet Red Peppers, diced
120g Savoy Cabbage, chopped

290g Black Beans (1 can)
2T Olive Oil
2T Balsamic Vinegar
2T Apple Cider Vinegar
1pk Italian Salad Dressing Mix
2g Dried Crushed Basil

Chop all veggies. Put 2T Olive Oil in wok and heat. When hot, add onion and pepper and lightly stir fry. Don’t cook for long. Add other veggies (but not beans) and toss to coat everything in the olive oil. Again, don’t cook for long. Toss and cook for maybe 3-5min. In a jar combine spices and vinegar then shake well. Add to veggies, and toss to coat. Add beans, toss. Remove from heat and serve. You want all veggies maybe half cooked. Everything should still have some crunch.
