Raspberry Cream (Vegan) Oatmeal

I bought some raspberries to try in my smoothie, but decided I preferred the strawberry alone. So, my oatmeal eating self decided to try raspberry oatmeal. I also found some vegan coconut coffee creamer at a natural food market yesterday, and thought it might be a nice addition. Simple recipe with a very raspberry ending.

Raspberry Cream (Vegan) Oatmeal

(4 servings)

160g Oats
60g Wheat Bran
280g Raspberries
4T SO Delicious Coconut Creamer

Weigh the berries, and put them in a med-large pot with about 6 cups of water. Keep in mind that you will have to keep adding water throughout the cooking process. Heat the berries on high until they start to boil, then turn the stove to medium. Continue cooking for about 15 minutes or until the berries start breaking apart. Add the oats and bran.

Cook on low for approximately another 30 minutes, or until the oats are done. Stir frequently, and add water when needed. I like my oatmeal pretty runny, so I add a lot of water. If you like you oats thick, just be careful not to burn them. Add the stevia and cream when the oatmeal is done.
