I altered the Vegan Thia Yellow Curry recipe to make it lower calorie. I managed to reduce the calories by 100 per serving. Quite impressive considering the quality is still there. I think I may like this one better, but I did add a few different ingredients.
Low-Cal Vegan Curry (10 servings, 212 calories, $1.47 per serving)
2 cans Coconut Milk (low fat, 250cals/can)
2 C Vegetable Stock
50g Yellow Curry Paste
50g Masman Curry Paste
4T Tamari
180g Onion, diced
14g Garlic, minced/pressed
300g Red Bell Pepper, diced
245g Eggplant, diced
450g Zucchini, shredded
160g Frozen Spinach
550g Chickpeas, canned
100g Quinoa
20g Ground Cayenne pepper (probably too much for most)
I basically just put it all in a pot starting with the liquid ingredients, then I let the curry simmer until the quinoa was cooked and the beans were softer. This is very enjoyable.
