This is my first attempt at a raw broccoli and cheese dish. I found a recipe and didn’t waiver too much; check out the original recipe here. Our visiting friend, I’ll call him RS from now on, really loved it, and said, “It was fricken killer”. Ha. QB ate all of it, but said it was, “Meh”. RS is a vegetarian, and said from a vegetarian perspective it would go great on crackers. Personally, I thought is was so so. I would make it again, I would like to improve on the sauce.
Raw Broccoli + “Cheese” Sauce ( serves 2-4 )
210g Broccoli
20g Nutritional Yeast
1.5T Olive Oil
100g Avocado, mashed
2t Braggs Liquid Aminos (or soy sauce)
1/2t salt
2t Red Wine Vinegar
1/4C Water
Black Pepper
Chop broccoli to very fine bits in a food processor and sit aside in a bowl. In a jar, or other container you can tightly close, combine sauce ingredients and shake well. Combine with broccoli. Divide and serve.
