My Morning Ginger Carrot Juice

The past few mornings, I made a simple carrot juice to drink on my way to work. I used to make my carrot juice with apples to sweeten it, but I am trying not to add additional sugar/fructose when I can avoid it. I am human, and sometimes I have difficulty resisting a sweet treat, but overall I manage to keep my sugar/fructose levels reasonably low. This is such a simple juice, I almost feel that typing it into recipe format seems a bit silly, but for documentation purposes…..eh, why not….   :-p

Morning Ginger Carrot Juice (serves 1, makes ~300g juice)

3-6 Carrots
1″ Fresh Ginger Root
Stevia
Ice
Jar

I start with 3-6 carrots depending on size. Usually 3 giant carrots will do the trick, but sometimes my carrots look a little puny. I simply juice my carrots with the ginger, put the juice in a jar with the stevia and ice, and shake (with the lid on of course). I pop in a straw, and sip on this instead of the coffee I used to drink on my way to work at 6am. I really don’t miss the coffee. After replacing my coffee with fresh carrot juice or green tea, coffee just isn’t satisfying and is often just too harsh tasting. However, I will dink a coffee with cream even now and then when I am out on the town.

Drink that orangey goodness! Yum!
