Really Tasty Raw Spanish "Rice"

I found a really yummy raw spanish “rice” recipe that both QB and I were surprised at how good it is. I think this is a popular recipe because I have seen it on website, blogs, and forums. I have no idea where the original started. Mine is slightly different, but I didn’t change much. Even though QB was surpisred at how good it was,  I’m not sure how much he will eat because he is still scared of cauliflower.

CR Friendly Raw Spanish “Rice” (serves 2)

280g Cauliflower
280g Tomato
80g Red Bell Pepper
40g Onion
140g Avocado
2T-4T Cilantro, Chopped
2T Lemon Juice
1T Olive Oil
1t Chili powder, paprika
1/2t-1t salt

I used a mini food processor to chop the cauliflower into fine bits. My “rice” was really more like quinoa. I then used the chopper to finely chop my tomatoes, onion, and bell pepper. I tossed these ingredients together in large mixing bowl, and added the cilantro that I chopped by hand. In a separate bowl, mash avocado then mix in lemon juice, olive oil, and spices. Combine all ingredients and mix thoroughly.

I ate mine with a side of shrimp that I dipped in the “rice”, but this dish could be used in so many yummy ways. I think this recipe will become a staple. :-)
