Raw Broccoli + Cranberry Salad, Revised

I substituted fresh cranberries for the dried ones, and the salad turned out really good. It’s a simple change, but I wanted update the recipe. ;-)

Raw Broccoli + Cranberry Salad (serves 1 or 2)

~110g Fresh Cranberries
~300g Broccoli, chopped fine (<1cm pieces)
1/4C Fresh Orange Juice
1/4C Lemon Juice (I cheat and use bottled)
32g Raw Almond Butter
stevia to sweeten cranberries

Chop broccoli  and put in a large tupperware. Place cranberries in a small pot with a small amount of water (maybe 1/3C) and cook until cranberries pop and become mushy, then stir in enough stevia to sweeten them (1/2-1t) . In a small jar, or sealable container, shake juices with almond butter until mixed thoroughly. Pour juice mix and cranberries over broccoli, close tupperware, shake it like you hate it, then let it marinate overnight.
