I recently found two raw recipes for broccoli and cauliflower that are pretty tasty. I found a couple of research papers about raw cruciferous vegetables that discuss how certain benefits are removed with cooking, but that will come later on this week. Until then…..you get recipes. Ha.
Simple Raw Broccoli Salad (serves 1 or 2)
3C Broccoli (~200g) chopped fine (.5-1cm pieces)
2 Cloves garlic, minced
~2T Cilantro, minced
1t cumin seeds
1T Olive Oil, organic first pressed
1/4C Lemon Juice
~1/2t salt (optional)
Put chopped broccoli in a seal-able container. In a small jar/tupperware container, combine all other ingredients and shake well. Pour over broccoli, close container, shake well, and marinate overnight. You could probably get by with less marinating time, but that is what I used. I liked this recipe, and intend on making it again. QB said it was pretty good, but he wasn’t sure if he would want to eat it everyday. Take from that what you will. :-) Recipe Inspiration
Colorful Raw Cauliflower Salad (serves 1 or 2)
2C Caulifower, chopped (~210g)
1/2 Red Bell Pepper, diced (65g)
0.5-1C Broccoli, chopped (40g)
90g Mandarin Slices, coarsely chopped
2T Lemon Juice
1/4C Fresh Orange Juice
Sprinkle salt, pepper, stevia.
Put all ingredients in a seal-able container. Shake well, and marinate overnight.You could probably get by with less marinating time, but that is what I used. I liked the broccoli better, but it wasn’t bad. I don’t know if I will make it exactly again, but it gives me some ideas. I’ll probably change a few things up and try again.
