My V8 juice and Brewer’s yeast drink has evolved into a soup. I started adding other ingredients a few days ago, and I have pretty much settled on a combination I like. The great thing about this soup, besides being tasty, is that it is quick to make, full of nutrition, and I don’t have to make a huge pot at a time. Also, since it is a tomato based soup, the ingredients are fairly flexible. One could add a wide variety of other items without risking making something nasty.
So, if you need a nutrition boost that’s slightly over 200 calories (depending on brands), don’t have much time, or both, check out this recipe.
CR Nutritional Tomato Soup (serves 1)
1C Low Sodium V8 (or equivalent, Wegman’s rocks!)
1/2C Pasta Sauce (I use Wegman’s Tomato Basil @ 70cal/0.5C)
15g Nutrition Yeast
4g Marmite
15g Baby Clams
60-70g Carrot, shredded finely
Italian Seasonings
I just mix everything in a bowl or large soup mug, then microwave. Quick and easy. Here is an overview of the nutritional content, but be aware that depending on which brands of products you use the results can slightly vary. I just couldn’t help but show these awesome numbers!
