CR Carrot Salad with Balsamic Garlic Dressing

I made a yummy carrot salad this evening with a homemade dressing. The dressing is what really makes the salad, so take that idea and experiment. I like using carrots as a base for salads, so expect that in here….ha.

CR Carrot Salad with Balsamic Garlic Dressing(serves 1)

~150g Carrot, finely shredded
~120g Tomato, diced
~75g Baby Bok Choy, shredded or chopped fine

Dressing:
2T Balsamic Vingar
1/2 T Flax seed Oil
1 large/2 small garlic cloves, minced
pinch salt, black pepper
1/4-1/2 t stevia as preferred

Mix salad ingredients in medium bowl. In separate small container with lid, combine dressing ingredients and shake well to mix, then pour on salad. Eat.
