Simply Slaw-ish with a Weekly Overview

Salads and slaws done right can be a tasty low calorie addition to a CR diet. There is no reason to eat plain lettuce or bland salad slaw thingies (unless you really like that sort of thing). I invented this slaw-ish dish one evening when I was hungry but didn’t have many calories left for they day. The dressing is virtually calorie free, and the bulk is just three ingredients. It’s quick, it’s filling, and it helped me satisfy a need for something sweet and crunchy.

CR Simply Slaw-ish (serves 1)

~100-150g Red Cabbage, shredded or sliced fine
~50g Baby Bok Choy, shredded or sliced fine
~100g Apple, shredded

Dressing:
~2T Walden Farms Coleslaw Dressing
~1T Yellow Mustard
~1T Dill Relish (not sweet)
~1T Tarragon Vingear
1/2 t stevia
1/2t tarragon

All these values are approximate. I sometimes just let the food fly in the kitchen, and then try to figure out what I did after the fact.

I’ve been tracking with spark people for a week now. I like how they show a weekly overview of all the days side by side. It’s a great way to observe progress or slacking, and it makes for a great overview pic for this blog. I started off great, wobbled a bit in the middle, but finished off with excellent numbers today.
