Bouncing Back with Kale Salads/Slaws

My calories are stabilizing today. Yesterday was a very low day (~500) because I did not get hungry until later in the evening. For the next 2-3 days I am going to keep my calories slightly lower to help balance out that high day. I am also starting an additional supplement: Bone-Up. I realized that much of my Ca+ and D3 was coming from supplements in foods I was eating. I didn’t want to have to rely on fortified foods to meet my RDAs, so to help out my bones I decided to start this supplement to ensure I get enough bone support and allow more freedom in my diet.

To get in my lutein and greens, I am eating two different types of kale salads. One is my “Kale Deliverance Salad”, and the other is more of a spicy kale slaw.

CR Kale Spicy Slaw (serves 2)

100g kale (shredded, chopped)
100g carrot (finely shredded)
28g sunflower seeds
30g Canola Light Mayo
1-2T Walden Farms Coleslaw Dressing
1T cider vinegar
1t stevia powder
1/2t ground allspice
1/2t dried oregano
1/2t dried thyme
1/2t paprika
1/2t cayenne
1/3t curry powder
1/4t salt
1/4t fresh cracked pepper
1/8t ground nutmeg
1/8t ground cinnamon
1/8t clove
