We got a ton of stuff at Wegman’s because it was basically two grocery trips rolled into one since I didn’t go last week. It is fun piling the goodies in the cart, but seeing the bill wasn’t pretty. At least I have a stocked pantry and fridge. I tried to get some different things, and am looking forward to getting creative in the kitchen in the next day or two.
I kept the experimentation simple tonight and stuck to roasted brussel sprouts and raw paleo brownies. The brownies were for QB as they are calorie dense. In the quest to find new recipes, I recently stumbled across some raw recipes, and noticed they fit right in with the paleo diet. Sweet. Now I have another category to look in for recipes. However, I am realizing my lack of a real food processor is going to seriously hinder me in that area.
Roasted Brussels Sprouts (serves 1 or 2)
300g Brussel Sprouts
Lemon Pepper Seasoning
Spray Olive Oil
Preheat oven to 400F. Cut the ends off of the sprouts and place them in a small pan. Spray with oil just enough to given each one a light coating. Sprinkle the seasoning on the sprouts and shake them around in the pan to distribute the seasoning. Bake for 35-40min. IMO, these are the best sprouts I have ever had – but I really don’t have a lot of sprout experience. :-p Inspiration Credit: RecipeZaar, Recipe #56103
Raw Paleo Brownies (8-12 brownies)
75g Dates, dried
75g Cherries, dried
110g Walnuts
1/4C Cocoa
3T Honey
Process all ingredients in a food processor. [This is where I had problems, but they turned out ok). Spread in a small pan (I used a bread loaf pan), and freeze for about 1hr. Remove from freezer and cut into desired pieces. Inspiration Credit: RecipeZaar, Recipe #303638
On another positive note, my meditation has been going well for the past 2 days. Each day I have sat for about 20-30min. I don’t time myself exactly. Each time it was ended by one of my doggies finding me and wanting to snuggle or kissy, but I was almost ready to stop due to back pain or feet going numb. I have a curvature in my upper spine that is a real annoyance. I would love to eventually get an inversion table to help that, but right now I bend over a couch arm to straighten it out when it really starts hurting. I’ve heard that woman tend to suffer from spine curvature much more frequently than men, just a random fact (so I’ve read).
